At the time of his passing, he was actively involved in the upcoming launch of a new restaurant alongside Bravo's Top Chef star Danny Garcia, as well as a five-restaurant partnership with Printemps on Wall Street.

Kent's culinary journey began under the tutelage of culinary giants like Gordon Ramsay, David Bouley, and Jean-Georges.
He honed his skills at their prestigious restaurants before taking on the role of chef de cuisine at Eleven Madison Park. From 2013 to 2017, he served as the executive chef of Nomad.

In 2019, Kent embarked on a solo venture, launching Crown Shy. The restaurant's a la carte menu quickly garnered a Michelin star, a testament to Kent's culinary talent.
His innovative spirit continued with the opening of Overstory, a sky bar consistently ranked among the world's top 50. Most recently, he had established Saga, a two-Michelin-starred restaurant located in the same building as Overstory.
